Parisian Pickling Cucumber – Classic French Cornichon
An heirloom variety from France, Parisian Pickling cucumbers trace their roots back to the 1800s. It was a favourite in Paris markets when northern gardeners needed a pickling cucumber that could crop reliably in cooler climates. Introduced to seed catalogs like those of J. H. Gregory in 1892 and known under names like “Improved Bourbonne” and “Cornichon vert petit de Paris,” this variety became beloved for its flavour and versatility.
Growing Notes & Flavour
Produces small, crunchy cucumbers with a sweet but tart bite when picked young. Perfect for cornichons and pickling. If allowed to grow larger, they make excellent slicing cucumbers. Skin is fine when young, with small inconspicuous seeds and thick-ish flesh that holds up well in brine.
Plants are vines (sprawling) which may benefit from trellising to save space and improve air circulation. Water needs are regular and soil fertility high.
Maturity & Harvest
Ready for pickling/cornichon stage in about 50–60 days from transplant/seeding. If you want larger slicing cucumbers, allow it to grow for 70-80 days. For pickling, fruits are best when small (~2 in / ~5 cm long), crisp and firm.
